A Fun Filled Weekend

Friday, Jeff's family was in town for his sister's graduation. As always, hearing "Pomp and Circumstance" gave me goose bumps and made me teary eyed...

Saturday, we took advantage of the beautiful weather and went to the driving range. Note: I am not a golfer, I don't know how to golf, and do not own clubs. I borrow the smallest club from Jeff's set. :) Maybe one day I will have a set of baby blue clubs of my own....to match my future baby blue scooter. A girl can dream.....

While getting ready for game night, Jeff spotted a hummingbird at the feeder. I was just beside myself. I adore hummingbirds. I am glad I put the feeder up early this year.
Last weekend I put up this squirrel feeder. My hope was that the squirrels would use their own feeder and stay out of my bird feeders, but no such luck. However, this is a great shot!
We hosted game night with E&E Saturday night. The menu was as follows:

Beverage: Red Wine

Appetizer: Morton's Crab Cakes

Salad: Spinach leaves with cherry tomatoes, pine nuts, parm cheese and a balsamic vinegar dressing



Main Course: Grilled Steaks

Desert: Chocolate Buttercream Cake (see previous blog post)

The making of the Lobster Mac-N-Cheese.

I couldn't find lobster meat so I finally just bought a tail. The recipe called for 6-8 oz of lobster meat and the tail was 6 oz. Next time, I am going with two tails.....it definitely needed more lobster!!!
The super delicious cheese sauce. Note to self: I need a bigger sauce pan. My biggest pan wasn't nearly big enough! Hence the edges of the pan covered in cheese....I kept spilling!!!!
Voila! Amazingness in a dish!


After dinner, we played poker, Pictionary and Wii bowling!
Sunday was an equally beautiful day. After taking my very first trip to Whole Foods (amazing by the way), we went to a UNF baseball game and cheered on the Ospreys.

Looks like a great weekend! What do you mean your first trip to whole foods? Is there a WF in Jax now?? A reason to come home for sure...
