The Heat Is On!!!

After almost 30 years in Florida, it seems like each summer gets hotter and hotter. And this year is no different. It is only March and temps were over 90 degrees today and the humidity doesn't help the situation one bit.


Okay, enough of my complaining. On to cookies.
This past week I had nothing short of a disastrous icing situation. I'm blaming it on the humidity. Without going in to a lot of details something drastically went wrong with my icing. I was working with three different colors. One of which was a little runny.....which has happened before but after two days, the icing did not set up. The night before the order was due, I had to toss out a third of the cookies and start over. I didn't have time to let myself cry, but that is all I wanted to do. I had to bake the cookies, make the icing, decorate and pray that the cookies set up over night. Success!
I made 15 birthday cake cookies in three colors, 2 different designs.

And 50 #3 cookies in three colors.
Today I baked up these ribbons for my friend's friend. Unfortunately, the color didn't translate that well when I took a picture but they are teal for Ovarian Cancer. (Anna, I'm thinking about you and I hope you enjoy the cookies!!!)

Your COOKIES are great, Melissa... love the birthday cakes... Icing not setting: That has happened to me!!! I always turn the ceiling fan on to help COOKIES dry... and on rainy days, I've dried COOKIES with a blow drier... some people put them 3-5 min in a hot oven, but I've never done it... it helps a lot to increase the meringue powder 50% on your recipe... Hope they dried on time :)

I just had to come over and tell you that your "swamp" comment made me laugh out loud!! I'm getting ready to wrap up in the bakery (still have 1 tray left to ice!) and I decided to read comments. Nice end to a crappy day.

if you have a small room that you can close off, get a dehumidifier and leave your cookies on a rack in the dehumidified room.
Also, invest in a heat gun. Works better than a hairdryer cause it gets super hot and doesn't blow huge gusts of air.
Just my 2cents!
