Lemon Extract

This week I made a tray of yellow ducks for a work baby shower and finally decided to try out lemon extract in the icing.


This extract is so potent....I made the mistake of dabbing some of my finger to taste it and couldn't get the lemon taste out of my mouth for hours!

I really didn't know how much to use, so I was very conservative. I added just enough extract to give the icing a hint of lemon taste. I received some good feedback today, so I will definitely use it again and maybe add a touch more next time.


I also decorated the ducks a little differently this time. Instead of dropping the eye and beak in the yellow icing while it was wet, I let the yellow icing set up and then apply. I like how the eye looks but not the beak so much because it doesn't flow very well. Oh well, lesson learned.

Nice ducks. I did the same thing with natural raspberry extract. Good in the raspberry marshmallows, not so much on the finger.
