Cookie orders have died down a little. No complaints though because the break is nice AND I am able to focus on other priorities, like finishing an unfinished house project from 2 1/2 years ago (no joke!) and maybe establishing a work out routine (it is too soon to tell where this will go).
This weekend, I FINALLY got around to making Barefoot Contessa's Coconut Cupcakes and they are fabulous!!!!. Unfortunately, batch of frosting made enough to ice 100 cupcakes and have quite a bit left. Any ideas of what I could use the remaining frosting on??? I hate to waste it....

I used the new C&B liners. Too bad the batter had so much butter that it seeped through and distorted the colors on the liners!!!

Mmm.. those look good! The coconut is fresh, I can't find one like that in Cancun, and have to make my own or use a super dry one... your cupcake liners are nice... I've seen cupcakes baked in regular white cupcake liners, and then placed in the decorated liner... here's an example http://farm4.static.flickr.com/3270/2702863254_20c4a1963d.jpg

That is one of my favorite cupcake recipes of all time!
I have made those cupcakes before and I even wrote a note in my cookbook about the amount of frosting it made...I ended up freezing it, but they are a great cupcake!!
I was going to suggest that you freeze the remaining frosting. You can defrost it, re beat it and use it the next time you make the cupcakes.
I'm working on a coconut cc recipe next week. I've got an excess of coconut right now!!
The pups look adorable, especially in the water bowl!!
